"My grace is sufficient for you, for my power is made perfect in weakness."

My kids like lentils.

No kidding. Tonight, I made Lentil and Sausage Soup and served it with fresh-from-the-oven homemade bread. The girls ate every bite and Satchmo couldn’t get enough. I think he would have eaten more than me had I not declared an end to the meal. I love that my kids aren’t picky, and that they’re enthusiastic eaters.

I love making soups. I love the simplicity of a one-dish meal with a hearty loaf of bread, I love the warm-to-your-toes feeling that accompanies each savory spoonful, I love the medley of flavors, and I especially love the fact that it’s a great way to use up leftovers. It’s also a way to sneak a variety of veggies into a picky eater, because no one ingredient stands on its own flavor. You will never catch me eating raw celery, but I can’t name a soup that doesn’t include it.

I’ll have to start posting my favorite soup recipes, along with what side items I like to pair with them. Dinner rolls will go with almost any soup, but I find I like to get more specialized to keep things interesting. Cheddar herb biscuits with Italian Sausage and Barley Soup, corn muffins with Black Bean Soup, and honey wheat rolls with Beef Vegetable Soup, and my personal favorite, Cheddar Potato Soup served in personal bread bowls. Mmm, if I wasn’t so full, I’d be up and cooking again now!
